We've used a tasty combination of coconut milk, vegetable stock and herbs and spices including garlic, chilli, ginger, turmeric, coriander and fennel to create a healthy and wholesome curry sauce so all you have to do is sizzle and serve! It's an awesome source of fibre, vitamin C and potassium.
As for your noodles – you can use any asian noodle you like! In this recipe, we've use thick banh canh rice noodles. Once you've cooked your jackfruit and noodles, combine them in a bowl and season with spring onion, hemp seeds, salt, pepper and chilli flakes (if you like it hot!) Jackfruit Curry Noodles
Tender Jack, Lunch, Dinner
1 pack Amazonia Tender Jack Curry
200g banh canh rice noodles
To serve: Spring onion, hemp seeds, chilli flakes, salt and pepper to taste
Bring a large pot of water to a boil. Once boiling, add the noodles and cook according to the package instructions.
While the noodles are cooking. Place a non-stick pan over medium heat, and empty contents of Jack curry pouch into pan.
Cook for 5-10 minutes or until contents are heated through.
Serve the noodles alongside the Jackfruit curry, top with spring onion, hemp seeds, salt and pepper, and a sprinkle some chilli flakes if you like it hot!
