These Strawberry Cheesecake Chia Cups are our latest breakfast obsession. They taste delicious enough to be a dessert, but there’s no refined sugars in sight!

Strawberry Cheesecake Chia Cups
1/4 cup chia seeds
1/2 cup filtered water
1/3 cup cashews
1/2 cup coconut yoghurt
1/4 cup strawberries, fresh or frozen
1 tbsp Raw Beauty Collagen Glow Unflavoured
1 tbsp honey
1 tsp vanilla essence
1 tsp beetroot powder (optional - for a colour and nutrition boost)
Firstly, combine chia seeds and water in a bowl. Mix and set aside whilst you make the strawberry blend.
Combine all remaining ingredients in a blender, blend until smooth.
Once the chia seeds have swollen and absorbed the water, stir through strawberry mix.
Transfer to jars and refrigerate for 1-2 hours.
Serve with extra coconut yoghurt and/or fresh berries.
