This delicious, quick and easy curry was created by Hannah and Jen, the team behind Healthy Luxe, and is made using Amazonia's Tender Jack Curry. Jackfruit is the perfect vegan alternative in dishes that traditionally use meat – as it has a consistency similar to pulled pork and very subtle flavour. This makes jackfruit very versatile as it easily absorbs the flavours it is paired with.
Low in calories and naturally fat- and sodium-free, jackfruit is a good source of vitamin C, potassium, dietary fiber, and other important vitamins and minerals including thiamin, niacin, riboflavin, and calcium. We recommend serving the curry on a bed of brown rice with chilli, micro greens and our tasty dairy-free tzatziki sauce – which is made with coconut yoghurt. Jackfruit Curry with Vegan Tzatziki
Lunch, Dinner, Tender Jack
1 pack Amazonia Tender Jack Curry
¾ cup cooked brown rice
1 small red chilli, finely chopped
¼ cup roasted pepitas
1/3 cup coconut yogurt
1 cucumber, thinly sliced
1 tbsp lemon juice
½ tbsp olive oil
Salt and pepper, to taste
1-2 tbsp dill, finely chopped
Firstly, prepare tzatziki. Combine all ingredients in a mixing bowl and gently mix using a wooden spoon.
Empty contents of Amazonia Tender Jack Curry into a non-stick saucepan and gently cook for approx. 10 minutes.
Add water as required to prevent jackfruit from stocking to the pan.
Arrange brown rice on plates and top with pulled jackfruit curry.
Garnish with chilli, pepitas and tzatziki sauce.
