Created in collaboration with Jazmin and Fiona, the superstar team behind @bakeateasy, you're not going to be able to get enough of these crunchy little protein balls! Perfect as a post-workout snack or after-dinner treat.
To create the crispy, crunchy texture, we've used a combination of shredded coconut and puffed quinoa (pronounced 'keen-wah')! It's a grain that's gluten-free, high in protein and one of the few plant foods that contain sufficient amounts of all nine essential amino acids. It's also a fantastic source of fibre, manganese, magnesium, iron and folate.
Depending on your diet, you can use either dairy-free or normal chocolate in this recipe. And for a bit of extra protein, we've included a scoop of our delicious Raw Protein Slim & Tone. Chocolate Crunch Protein Balls
200g vegan or milk chocolate
1 tbsp Raw Protein Slim & Tone
1 cup puffed quinoa
1/2 cup shredded coconut
Pinch of salt
Melt the chocolate in a bowl
Add the puffed quinoa, coconut, protein powder and salt, stir and
Scoop onto parchment paper using a spoon or small ice cream scoop
Let balls set in the fridge for about 30 minutes
Roll into snack-sized balls and enjoy straight from the fridge or store them in an airtight container in the fridge for up to 5 days
