Unless you've been living under a rock, you'll have noticed that poke bowls have exploded in popularity recently.
The Hawaiian dish is traditionally made with tuna or some kind of fish, but for a meat-free alternative, we’ll be using our ready-made Tender Jack Teriyaki. It's packed full of flavour, fibre, protein, Vitamin A & C and manganese – and it's ready in just 5 minutes.
These bowls also make it super easy to squeeze some extra veggies in – the more colourful, the better! Perfect for a quick and healthy lunch, dinner or make-ahead meal, they can be whipped up in as little as 20 minutes.

Vegan Jackfruit Poke Bowl
Lunch & Dinner, Tender Jack
1 pack Amazonia Tender Jack Teriyaki
1.5 cups cooked sushi rice
1 tsp rice vinegar
½ tsp salt
½ tsp brown sugar
Seaweed and sesame seeds for garnish
Place cooked sushi rice in a bowl and add rice vinegar, salt and brown sugar and stir to combine
Empty Tender Jack pouch into pan and cook for 5-10 minutes or until contents are heated through, then set aside
Transfer rice into 2 bowls, top with Tender Jack and vegetables
Garnish with sesame seeds and seaweed and serve immediately
