This wholesome granola cookie recipe combines two of our favourite things: (you guessed it) granola and cookies. They start with a creamy base of coconut butter and peanut butter mixed with coconut sugar for sweetness. These ingredients give the cookies a boost of healthy fats for sustained fullness.
These healthy granola cookies are nutritiously crafted with gluten free flour (you could also use wholemeal or plain flour) and include plenty peanut butter for healthy fats and our Raw Protein Isolate Choc Coconut for added plant protein and nutrients. It contains a complete amino acid profile plus Zinc, Phosphorous and 53% RDI Iron, formulated with certified organic sprouted and fermented plant protein to support lean muscle growth and recovery.
To the wet mix, add the protein, cacao, flour and salt and then mix through your favourite granola. Press into cookies on a lined baking tray and pop in the oven for about 15 minutes. Once they’re ready, remove the oven and allow to cool before topping with a dollop of nut butter and a sprinkling of granola. Dessert & Snacks
1/3 cup melted coconut butter (or oil)
1/2 cup cashew or peanut butter (+ extra to top)
1/4 cup coconut sugar
2 tbsp Raw Protein Isolate Choc Coconut
2 tbsp cacao powder
1 cup all-purpose gluten free flour
1/2 tsp sea salt
3/4 cup choice of granola (+ extra to top)
Preheat oven to 180 degrees C.
Combine coconut butter, nut butter and coconut sugar. Use an electric or handheld mixer, mix until light and fluffy.
Add cacao, protein, flour, and sea salt. Mix well before gently stirring through granola.
Press into small circular cookie shapes and arrange on a lined baking tray.
Bake for 15 minutes or until just firm.
Remove from oven and allow to cool completely.
Spread extra nut butter on top and sprinkle with granola.
Serve and enjoy.
