Did someone say superfood pancakes? These delicious anti-inflammatory Golden Pancakes are so easy to make thanks to Amazonia Golden Latte blend. Drawing on Ayurveda’s healing ‘Golden Milk’, it's made from a warming spice blend of Turmeric, Cinnamon, Clove and Ginger. Distinguished by its vibrant colour and powerful antioxidant properties, Turmeric contains a flavonoid called curcumin, which helps to decrease inflammation in the body.
Not only does the aroma of cinnamon take you to a happy place, but it's also a superfood! With powerful antioxidant and anti-inflammatory properties, cinnamon's warmth increases blood flow and improves blood oxygen levels to help fight off illness. And ginger has a long tradition of being very effective in alleviating stomach discomfort and reducing the symptoms associated with motion sickness, including dizziness, nausea and vomiting.

½ cup almond meal (or sesame flour to make nut free)
½ cup buckwheat flour
2 tbsp Amazonia Golden Latte
1 tbsp baking powder
2 organic eggs, separated
1 cup coconut milk
Combine dry ingredients in a mixing bowl
Then add egg yolks and milk, mix well.
Beat egg whites until firm peaks form then gently fold into the pancake mixture.
Place coconut oil in a non-stick pan and allow to melt over low-medium heat.
Add a small amount of the pancake mixture and leave to cook for 1-2 minutes (or until bubbles start to form). Flip and allow the other side to cook for another minute or so. Repeat this process for the rest of the mixture.
Stack pancakes and serve with coconut yogurt and/ or maple syrup.
