The name says it all. Chocolate. Pudding. Pancakes.
We're so about dessert for breakfast! Especially when it's got a healthy twist! These pancakes by Healthy Luxe are the ultimate chocolate indulgence. She has used a combination of blanched almond meal and buckwheat flour to create a soft ‘pudding-like’ consistency.
For a hit of protein, flavour and extra nutrients, she's also included a few spoonfuls of our Raw Protein Isolate in Choc Coconut flavour. It's made with sprouted and fermented plant protein so it's easy on digestion, and it contains up to 99% RDI Iron per serve!
We recommend serving with Healthy Luxe's addictive choc-tahini sauce, chocolate coyo and your choice of fresh berries.

Chocolate Pudding Pancakes
2 tbsp Amazonia Raw Protein Isolate Choc Coconut
¼ cup blanched almond meal
¼ cup buckwheat flour
2-3 tbsp cacao powder
1 tsp baking powder
1 pinch Himalayan salt
1 ripe banana
2-3 medjool dates
½ cup almond milk
1 tbsp coconut oil (+1 tsp to cook)
2 organic eggs, separated
1 serve choc-tahini sauce
1 1/2 tbsp cacao powder
1 tbsp coconut nectar (alter according to desired sweetness)
1/2 tbsp hulled tahini
Boiling water, add to desired consistency
Combine all dry ingredients in a mixing bowl
Place banana, dates, almond milk, egg yolks and coconut oil in a blender, blend until smooth
Pour into the dry mixture and mix well
Whisk eggs until firm peaks form and then gently fold into the pancake mixture
Prepare choc-tahini sauce (refer to sweet spreads and sauces collection)
Add coconut oil in a non-stick pan and allow to melt over medium heat
Place a small amount of the mixture in the pan and cook for 1-2 minutes (or until bubbles start to form)
Flip and allow the other side to cook for a further minute or so.
To make the Choc-Tahini Sauce
Place cacao powder in a small bowl and add in coconut nectar.
Then, add in a dash of boiling water and mix until coconut nectar has melted and ingredients are combined.
Add in tahini (this will create a creamier texture) and mix before adding in boiling water to desired consistency.
Serve pancakes with the choc-tahini sauce, chocolate coconut yoghurt and fresh berries.
