Berry Glow Pancakes
No weekend is complete without homemade pancakes – and these ones are a real winner. Topped with a homemade berry coulis, they pack a nutritional punch and contain hidden vitamins and minerals!
First up, make your berry coulis by adding the berries, OJ and maple syrup to a saucepan. Bring to a boil then reduce to a simmer for a deliciously sweet but tart topping for your pancakes. Next, combine the dry ingredients for the pancakes, then add in the wet ingredients and mix well until there’s no lumps.

Berry Glow Pancakes
1 cup almond meal
1/4 cup all-purpose gluten free flour
2 tsp Raw Wholefood Extracts Women’s Multi
2 organic eggs (or vegan egg substitute)
1/2 cup oat milk
1/4 tsp salt (optional)
1-2 tsp coconut oil, to cook
1 cup frozen berries
1/2 cup fresh orange juice
1-2 tbsp maple syrup
Firstly, prepare coulis. Combine all ingredients in a saucepan and bring to a boil, then reduce to simmer for 5-10 minutes.
Allow to cool and transfer to a blender, blend until smooth.
Combine all dry ingredients for the pancakes. Add ‘wet’ ingredients and mix well.
Place coconut oil in a non-stick pan and melt over medium heat.
Place a small amount of batter (approx. 1/4 cup) onto hot pan. Cook for 1-2 minutes, or until bubbles start to form, flip, and cook for a further minute or so.
Transfer to serving plates and top with coconut yoghurt, berry coulis and fresh berries.
