Scrambled Oats with Berry Compote
3/4 cup rolled oats
1 organic egg (or vegan egg substitute)
1 ripe banana
1 tsp Raw Probiotics Biotic Ferment
1/2 tsp cinnamon
1/2 tbsp coconut oil, to cook
Coconut yoghurt and honey/maple syrup, to serve
1 cup frozen mixed berries
1 tbsp maple syrup or honey
½ lemon, juiced
First, prepare the berry compote by adding the berries to a saucepan and heating over medium-high heat for 3-4 minutes.
Bring the mixture to a boil, then reduce the heat for 2-3 more minutes. Occasionally press the berries, so they release more of their juices (without mashing them fully).
Add the maple syrup towards the end of the cooking time and stir well. Feel free to adjust the amount of lemon juice/sweetener at any time.
Remove from the heat and set aside to cool.
Next, combine all oats ingredients in a small mixing bowl and mix well.
Place coconut oil in a non-stick pan and allow to melt.
Spoon oat mixture into the pan and press flat. Cook for 2-3 minutes before using a spatula to gently scramble until golden.
Serve with your choice of yoghurt and the berry compote. Add honey or maple syrup to taste.
