Pregnancy-friendly Protein Balls
1 serve Raw Protein Pregnancy Plus Smooth Vanilla
1 cup almonds
1/2 cup gluten-free quick or rolled oats
1/4 cup + 2 Medjool dates, pitted and packed
1/4 cup water (coconut water or non-dairy milk works, too)
2 tbsp cacao nibs
1 tbsp organic maple syrup
1 tsp pure vanilla extract
1/4 tsp pink Himalayan salt
1/4 tsp cinnamon
Desiccated coconut (for rolling)
If you are using rolled oats, place into a food processor and run until broken down into the consistency of quick oats (about 30 seconds).
Place all of the remaining ingredients in a food processor and blend until a dough forms, adding more coconut water as needed. The dough should stay together when you press it between your fingers.
Scoop the dough into a tablespoon-sized ball, press tightly. Roll each ball in desiccated coconut.
Store in the refrigerator in an airtight container for up to 1 week.
