Donburi rice bowls are the quintessential Japanese comfort meal. A soft bed of fluffy rice is topped with your choice of meat, vegetables and fresh garnish – so wholesome!
In this recipe, Healthy Luxe has subbed meat for our Smokey BBQ Tender Jack. It’s made from young hand-pulled jackfruit (which has a texture similar to pulled meat) hand-harvested in Sri Lanka. It’s Certified Organic, packed with dietary fibre and contains zero artificial ingredients.
The great thing about these bowls is that you can add pretty much any veggies you have left in your fridge. This bowl has grated carrot, sliced capsicum and cucumber, shredded red cabbage and avocado, topped with shallots and sesame seeds.

BBQ Jackfruit Donburi
Lunch & Dinner, Tender Jack
1/2 tbsp olive oil (+ extra to dress the bowl)
1 pack Tender Jack Smokey BBQ
1 cup cooked brown rice
1 carrot, peeled and grated
1 small capsicum, sliced
1/2 cucumber, sliced
1/2 cup shredded red cabbage
1/2 ripe avocado
1 shallot, to garnish
1 tbsp sesame seeds, to garnish
Place olive oil in a non-stick pan and gently heat for 1-2 minutes. Add jackfruit, cook for 10-15 minutes, stirring occasionally and gently pulling apart the jackfruit.
Arrange all salad ingredients in a large bowl.
Add cooked jackfruit and garnish with sliced shallots and sesame seeds.
Drizzle with olive oil, serve and enjoy.
