Dairy Free products are a medical necessity for me and this protein powder ticks all the vegan boxes. Nice tasting and surprising very filling when added to cold water for an after workout drink. Also great for adding to recipes like "No Bake Mini Protein Cups". See my below recipe!
No Bake mini Protein Cups
¾ cup of natural creamy peanut butter
¼ cup of honey
1 tbsp of melted coconut oil
1 tsp of vanilla extract
1/3 cup of ground almond meal
½ cup of your favourite vanilla protein powder
Vegan friendly dairy free chocolate spread (I use Sweet William Chocolate Spread)
1. In a medium bowl, mix peanut butter, honey, coconut oil and vanilla extract, together.
2. Add in the almond meal and protein powder and mix until it forms a cookie dough like batter.
3. Line a mini muffin pan with mini paper patty pans and spoon in the mixture just to the top, adding a flat teaspoon of Chocolate spread on top.
5. Place in freezer for 30 minutes to 1 hour before slicing into mini squares.
