Craving something sweet but not in the mood for chocolate? These delectable baked lemon puddings are sure to hit the spot. Made with our Raw Wholefood Extracts Vitamin C+, they’re full of antioxidants and Vitamin C-rich superfoods to support immunity and skin health.
Grab a bowl and add your coconut butter, lemon zest (this is key for flavour), and sugar and mix well. Gradually stir in the egg yolks (placing the whites in a separate bowl), then add the flour, Vitamin C+, oat milk and lemon juice and stir to combine. Whisk your egg whites until peaks form then add them to the mixture.
Pour into ramekins, then fill a casserole tray with water and place your ramekins in there. Bake for about 35-40 minutes until they’re lightly golden on top! Sprinkle with desiccated coconut and serve while hot. This would also be great served with a dollop of coconut yoghurt. Baked Lemon Puddings
1/2 cup melted coconut butter
4 tsp lemon zest
1/3 cup raw sugar (or coconut sugar)
3 organic eggs, separated
1/4 cup self-raising flour
1 tsp Raw Wholefood Extracts Vitamin C+
1 1/4 cups oat milk
1/3 cup lemon juice
Desiccated coconut, to sprinkle on top
Coconut yoghurt, to serve (optional)
Preheat oven to 180 Degrees C.
Combine coconut butter, lemon zest, and sugar in a mixing bowl, mix well.
Gradually add egg yolks and mix until creamy. Add flour, Vitamin C powder, oat milk and lemon juice. Mix until all ingredients are well combined.
Whisk egg whites until firm peaks form, and then slowly add to the lemon mixture.
Pour into ramekins.
Fill a casserole tray with water and place ramekins in the water. Bake for 35-40 minutes or until lightly golden on top.
Sprinkle with desiccated coconut (optional) and serve whilst hot.
