There’s something familiar and comforting about a freshly baked dish of homemade apple crumble. Putting a healthy twist on the classic recipe, Healthy Luxe has created this protein-packed apple crumble. Perfect for when you want an indulgent dessert without the sugar crash.
She’s used a base of green apples (you can also use red if you prefer it sweeter), and has made her crumble using oats, almond meal, coconut sugar, coconut butter, and our Raw Protein Paleo Fermented in the flavour Vanilla Lucuma. She’s also added a sprinkle of cinnamon, a dash of vanilla essence and a pinch of salt to enhance the flavour.

8 green apples, peeled and chopped
1 3/4 cups oats
3/4 cup almond meal
2 tbsp Raw Protein Paleo Fermented Vanilla Lucuma
1/2 cup coconut sugar
1/2 cup coconut butter (or organic butter), melted
1 tsp cinnamon
1 tsp vanilla essence
1/2 tsp salt
Preheat oven to 180°C.
With coconut butter, lightly grease a large baking dish.
Arrange the apples on the base of the baking tray.
Combine oats, almond meal, protein and coconut sugar in a mixing bowl, mix well.
Gradually add melted butter, cinnamon, vanilla and salt, mixing through (it is easiest to use your hands). Note: if the mixture looks dry, add a little more butter.
Crumble on top of the apples.
Bake for 45 minutes - 1 hour or until apples have softened.
Serve with your choice of ice-cream or yoghurt.
