Chocolate Zucchini Loaf

This simple, one-bowl Chocolate Zucchini Loaf is a deliciously sweet way to make the most of the leftover zucchini’s rolling around in your fridge. It’s also a great way to sneak some extra greens in. Prep it on Sunday's for an easy afternoon sweet treat to get you through the week.

Zucchini is a super versatile vegetable because it’s almost flavourless, so it goes basically undetected in this rich chocolate loaf. We’ve also included a spoonful of our Raw Nutrients Greens for an extra hit of greens. It has organic spirulina, chlorella, wheatgrass, kale, spinach, herbs and more to support detoxification, digestion, and liver function.

This recipe also uses almond flour over regular flour for its high nutrient content – think Vitamin E, Magnesium, and fibre. Almond flour is also low in carbohydrates, high in heart-healthy fats, and gluten free.

Prepare your ‘wet’ ingredients in one bowl, and your dry ingredients in another then combine the two. Pour into a loaf tin and pop it in the oven for about 30-35 minutes or until your skewer comes out clean. Let it rest for about 5-10 minutes then serve warm with honey or butter.
