Simply make a cut from the middle of the tortilla down to one edge, fill each quadrant with your fillings of choice, then fold it all up into a neat triangle that can be eaten as is or grilled! All your fillings stay inside the wrap and it’s super easy to eat! Healthy Luxe has filled her wrap with mashed avocado, vegan cheddar cheese, tomato salsa and Amazonia Tender Jack Smokey BBQ.

BBQ Jackfruit Tortilla Wraps
Tender Jack, Lunch, Dinner
1 tbsp olive oil
1 pack Amazonia Tender Jack Smokey BBQ
4 organic wraps
1 ripe avocado, mashed (add lemon juice, salt and pepper to taste)
50g vegan cheddar cheese
50g organic tomato and basil chunky pasta sauce (store bought)
Place olive oil in a non-stick pan and gently heat for 1-2 minutes. Add jackfruit, cook for 10-15 minutes, stirring occasionally and gently pulling apart the jackfruit.
Using kitchen scissors, make one cut from outer edge to centre of tortilla.
Place equal amounts of jackfruit, avocado, cheese and tomato salsa in four quadrants (watch demonstration video for explanation).
Fold and place in double sided griddle for 2-3 minutes.
Serve and enjoy!
